Chia Berry Pudding

It's been a while since I posted a recipe. I have a long list of recipes to post over the next few weeks. I have done quite a bit of cooking during this period of #stayathome. The recipe below is a wonderful quick way to make an early morning snack or an evening dessert. I love Chia Pudding and this is one of my favorites.


Ingredients

3 T Chia Seeds

1/2 Cup Plant Based Milk

1 cup mixed berries

1/4 cup Maple Syrup (optional)

1 teaspoon Vanilla Flavoring (optional)


Directions

  1. In a small bowl mix Chia seeds, maple syrup, vanilla and milk. Stir. (note: you can use a milk product and sweetener of your choice. I used organic maple syrup and oat milk. Add in the maple syrup 1 Tablespoon at a time).

  2. Continue to stir every 3 - 5 minutes until the mixture starts to thicken.

  3. In another bowl measure out 1 cup of mixed berries. Mash the berries with a fork.

  4. Add the berries to the thickened chia pudding. Mix well.

  5. You can eat this now or you can refrigerate. It tastes great warm or cold.
