Bluenana Ice Cream

Yum, yum, yum!!! I was listening to a podcast by Dr. Michael Greger on the health benefits of blueberries when I decided to make some blueberry ice cream. Since I have decided to "Switch 4 Good" I needed to be creative. Below is a quick and easy recipe that required only 4 ingredients to make a healthy Bluenana Ice Cream. WARNING: it is very moreish!

2 medium size frozen bananas

1 cup blueberries

1/2 cup Oat Milk (or other plant based milk; one of my favorites is Elmhurst Oat Milk)

2 tablespoons maple syrup (optional. If your bananas are ripe and sweet you will not need this)

Place all ingredients in a blender or food processor

Blend until smooth and creamy

Bluenana Ice Cream: I used a hand blender for this recipe. Quick and easy!

I was lazy the day I made this and used the XProject 5:1 Hand Blender rather than pulling out my VitaMix.

Please let me know in the comments below if you try this recipe. You could top with more blueberries, plant based chocolate chips or other types of berries. Share this recipe and your variations on Instagram and follow me on Instagram (@WingmanDaphne).
