It is amazing how my weekly meal prep has changed. I hope to be more consistent in posting pictures of my meals and/or recipes that I am creating. While I was shopping yesterday I saw the cutest English Cucumbers and so I purchased them with the plan to make cucumber salad. I have a picture of the finished product and the recipe below.
I log everything in MyFitnessPal. Why? It provides me with some accountability in addition to the fact that I am a numbers person. I estimated 4 servings but I could see that it could be 2 servings if you are hungry. The sodium is HIGH!!! I will work on this for the next version of the recipe. This is far in excess of the RDA of sodium and har exceeds my desired intake too. You can easily not add the salt in this recipe. There is plenty of flavor from the herbs.
